Probiotics and Kombucha Recipe

      In our digestive system we have good bacteria called probiotics.  Unfortunately there are things that can kills these probiotics like sugar, processed foods, stress and prescription antibiotics.  Also back in the day when there was no such thing as a refrigerator so our ancestors used to ferment there food to keep it from spoiling and this helped them get their probiotics.  Now that we have refrigerators our foods are not being fermented and we are consuming a lot less fermented foods. 

 

The benefits of probiotics are:

 

  • Probiotics helps with balancing the good bacteria in the digestive system.

  • Probiotics helps strengthen the immune system.

  • Because probiotics help with the immune system they can help with allergies, colds and flus.

  • Probiotics help mental health.  Have you ever heard the saying ‘A happy gut makes a healthy mind’?  It is so true, the gut and the brain communicate with each other.  It can help improve anxiety, depression and memory.

  • Probiotics can help with weight loss.

  • Probiotics helps with the absorption of vitamin B12, which helps increase energy.  It also helps with the absorption of magnesium and iron.  

  • Probiotics can help get rid of candida.

  • Probiotics can help heal leaky gut syndrome.

     

     Ways to get more probiotics in your system.  Consuming fermented foods like sauerkraut, yogurt and kefir.  You can also find it in a supplement.  My favorite though is kombucha!  Kombucha is a fermented tea and is great in moderation.  It is a great substitute for soda and energy drinks. 

 

     You can get store bought kombucha at any health food store and there are so many brands and flavors to choose from.  I find most of them to be absolutely delicious.  However if you are like me, I am on a tight budget, store bought kombucha can get expensive. 

 

     While making kombucha you can either make your own scoby or purchase a scoby.  I have never purchased a scoby.  So I am not exactly sure where you can buy one, maybe from Amazon or look up other places.  I have felt more comfortable making my own and I will add that recipe in this post. 

 

     What is a scoby?  Scoby stands for ‘symbiotic colony of bacteria and yeast’.  A scoby to me is both so cool and gross!  It is this slimly pancake looking thing.  Scoby is combination of many different organisms that digests the sugars and produces the probiotics, enzymes, anti-oxidants, vitamins and acids and help ferment the tea. 

This whole process of making kombucha is really easy, but takes time.  It can take up to a month. 

 

 

 

How to make the scoby:

 

What you will need:

  • 4 cups of filtered water

  • 3 organic black tea bags

  • 1/3 cup of organic suger

  • 1 bottle of original kombucha (I have had good luck with this one)

  • A large sterilize glass jar

  • A clean cloth or paper towel

  • Rubber band

Directions:

  1. Sterilize the jar.  I use vinegar and boiling water.

  2. You will bring the 4 cups of filtered water to a boil and add the 3 organic black tea bags and let it brew for however long you want make yourself a cup of tea.

  3. Add the 1/3 cup of organic sugar and stir it in and turn the heat off. 

  4. Let the tea cool down to room temperature. 

  5. Once the tea is room temperature, pour the tea into the jar along with the bottle of original kombucha. (You should something small floating right away, that is the Kombucha Mother.)

  6. Cover the jar with a breathable cloth.  I just paper towels and so far that is working just fine.  (I tried cheese cloths in the past and gnats were able to figure their way in and I had to dump the whole thing).  Secure the cloth with a rubber band.

  7. Last step is to set it somewhere and watch the scoby grow.  (Somewhere above 70 F. degree would be best)  It should be done in a week of two, when it is about a ¼ of an inch thick.

 

     When I first started making the scoby I would stress out wondering if it looked okay and if it was growing right.  I was scared I was going to poison myself and whoever else was going to drink it.  After a while I was able to tell what looks right and what didn’t.  So here is what to look for, it should be an off white color.  If there is brown mixed in it is okay.  It is good if it floats, sinks, has things dangling off of it, it is splits and makes certain designs.  What you don’t want to see, anything fuzzy or green.  As long as everything is clean there shouldn’t be a problem.

 

 

 

 How to make the kombucha:

 

What you will need:

  • 3 to 4 liters of filtered water

  • 6 to 7 organic tea bag

  • 1 cup organic sugar

  • 1 cup of the start tea

  • The scoby you just created (or the purchased scoby)

  • Large sterilized glass jar

  • Clean cloth or paper towel

 

Directions:

  1. Sterilize the jar.  I use vinegar and boiling water.

  2. You will bring the 3 to 4 liters of filtered water to a boil and add the 6 to 7 organic black tea bags and let it brew for however long you would to make yourself a cup of tea.

  3. Add the 1 cup of organic sugar and stir it in and turn the heat off. 

  4. Let the tea cool down to room temperature.  Hot water will harm the scoby.  

  5. Once the tea is room temperature, pour the tea into the jar along with the 1 cup starter tea.

  6. Then add your beautiful scoby.

  7. Cover the jar with a breathable cloth.  I just use paper towels and so far that is working just fine.  (I tried cheese cloths in the past and gnats were able to figure their way in and I had to dump the whole thing).  Secure the cloth with a rubber band.

  8. Last step is to set it somewhere (somewhere above 70 F. degree would be best) .  Another scoby will form.  You should have your kombacha sometime in a week or two, when the 2nd scoby is about a ¼ to an inch.

  9. Enjoy your kombucha!  You can add some organic fruit juice to add different flavors.
